300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Drink (makes 850ml, serving 10)

200ml clementine cordial (from the recipe above)

Directions
To prepare the Cordial: Combine all the components inside a saucepan, bring to a gentle boil, stirring so the sugar melts. Next, remove from the heat and leave to cool down entirely. Decant into an clean bottle, close it and refrigerate it chilled, where it will keep for up to a month.
To make Cocktail Base: Mix all the liquid ingredients into a large bottle, allow it to infuse for an hour, then filter it best through muslin, so it's fully clarified.
For serving: Measure 85ml of your premix to a stirring glass filled with ice, gently stirring lightly for about 60 seconds until cold. Pour to a frosted cocktail glass or equivalent, top with some cranberries and finish using a quick spritz with the mandarin essence over the top.
